For centuries, in small mountain dairies, master cheesemakers have repeated the same gestures passed down from generation to generation. The result is a cheese that captures the true essence of its land: authenticity, quality, and genuine flavour.


A Mountain Cheese Unique in the World

Parmigiano Reggiano PDO is produced exclusively using milk from the Reggiano Apennines, rennet, and salt, with no added preservatives or additives.
Cows are mainly fed local forage, grass, and mountain hay, which give the milk floral aromas and a balanced, elegant taste.

This special milk, rich in nutrients and aromas, is processed while still fresh, within just a few hours of milking. After careful cooking and natural creaming, the curd is hand-lifted and skilfully shaped into the classic round wheels of Parmigiano Reggiano.

The slow, natural ageing process allows the cheese to develop a granular, compact yet crumbly texture, with an intense aroma and a complex, harmonious, full-bodied flavour.

Storage

After opening, Parmigiano Reggiano PDO should be stored in the refrigerator at a temperature between +4°C and +8°C, preferably wrapped in food-grade cling film or polyethylene paper.
To preserve its aroma and ideal texture, protect it from light and air. Once cut, it is recommended to consume it within 10 days.
