Parmigiano Reggiano PDO – The Authentic Flavour of the Reggiano Apennines

Parmigiano Reggiano PDO is much more than a cheese: it is a symbol of Italian gastronomic excellence and one of the highest expressions of Emilian cheesemaking tradition.
It is produced in the heart of the Reggiano Apennines, at over 700 metres above sea level, where pure mountain air, natural pastures, and the slow rhythm of life give the milk a unique aromatic profile rich in nuance.

For centuries, in small mountain dairies, master cheesemakers have repeated the same gestures passed down from generation to generation. The result is a cheese that embodies the essence of its land: authenticity, quality, and true flavour.

A Mountain Cheese Like No Other

Parmigiano Reggiano PDO is made exclusively with milk from the Reggiano Apennines, rennet, and salt—without preservatives or additives.
Cows are mainly fed local forage, grass, and mountain hay, which give the milk floral notes and a balanced, elegant taste.

This special milk, rich in nutrients and aromas, is processed while still fresh, within just a few hours of milking. After careful cooking and natural creaming, the curd is hand-lifted and skilfully shaped into the iconic round wheels of Parmigiano Reggiano.

The slow, natural ageing process allows the cheese to develop a compact yet crumbly granular texture, an intense aroma, and a complex, harmonious, full-bodied flavour.

Appearance, Aroma, and Flavour

Mountain-produced Parmigiano Reggiano PDO is characterised by its natural straw-yellow colour, derived from the carotenoids present in the milk of cows fed on fresh grass and hay.
The paste is crumbly, granular, and compact, breaking easily into flakes when cut.

On the palate, it reveals an intense yet harmonious aroma, with notes of melted butter, dried fruit, and warm broth.
The flavour is full and balanced, never overly salty, with a long aromatic finish that leaves a pleasantly savoury yet subtly sweet sensation.

Every bite tells the story of its land of origin: the Apennines, mountain pastures, and the daily craftsmanship of cheesemakers.

Storage

After opening, Parmigiano Reggiano PDO should be stored in the refrigerator at a temperature between +4°C and +8°C, preferably wrapped in food-grade cling film or polyethylene paper.
To preserve its fragrance and texture, protect it from light and air. Once cut, it is recommended to consume it within 10 days.

How to Enjoy It

Parmigiano Reggiano PDO is incredibly versatile:

  • Excellent on its own, to fully appreciate its structure and aromatic complexity;

  • Perfect grated over pasta, risottos, and soups;

  • Delicious in flakes, paired with honey, fruit, or balsamic vinegar;

  • Ideal for aperitifs and cheese boards with local cured meats and wines.

It pairs beautifully with structured white wines or light red wines from Emilia-Romagna, enhancing its savoury notes without overpowering its flavour.
