Production Process

Dolomitenkönig follows a rigorous, carefully calibrated process designed to enhance the organoleptic qualities of mountain milk:

Milking and Collection
Fresh whole milk is transported immediately after milking to the dairy—freshness is essential for a vibrant aromatic profile.

Coagulation and Curd Cutting
At a constant temperature (32–34 °C), natural rennet transforms the milk into curd, which is then cut into medium-sized grains to encourage the characteristic eye formation.

Whey Cooking and Pressing
Gentle heating up to 50 °C is followed by pressing for 12–24 hours, shaping the wheel and compacting the paste.

Salting
Light brining or dry salting for 1–2 days provides balanced savouriness, complementing the milk’s natural sweetness.

Ageing
The cheese rests for 3 to 6 months in cellars at 85% humidity. During this period, the rind firms up, the eyes develop, and harmonious aromas of hazelnut and honey emerge.
