Introduction

Born among the green valleys of Val Pusteria, Pustertaler Mila is a cheese that expresses the purity of South Tyrol.
With an intense aroma of milk and hay, it features a compact, golden-yellow paste and a natural, lightly waxed rind. Its harmonious flavour, with notes of butter and hazelnut, makes it a versatile and refined cheese, ideal both as a table cheese and for cooking.
Like many alpine cheeses, it is naturally lactose-free (<0.1 g/100 g), the result of a well-balanced maturation process.

Production Process

Milking and Collection
High-quality whole milk from cows fed with local hay and forage.

Coagulation
Natural rennet and selected lactic cultures create a compact, uniform curd.

Cutting and Pressing
The curd is finely cut and pressed to achieve the characteristic smooth paste with no holes.

Salting
Brined for several days to balance sweetness and savouriness.

Ageing
A minimum of 8 months in environments with controlled temperature and humidity.
During this time, it develops its elastic texture and the characteristic sweet aroma of cooked milk.
