Apennine Pecorino Aged 12 Months is a refined cheese with a bold character, born in the mountain pastures of Villa Minozzo, in the heart of the Reggiano Apennines.
Made with pasteurised sheep’s milk from local farms, it embodies the essence of Emilian cheesemaking tradition: a perfect balance of craftsmanship, nature, and time.

Over twelve months of ageing, the cheese evolves into a true masterpiece of flavour. The paste becomes firm and compact, enriched with intense aromas and a distinctive fragrance of mountain herbs and hay.


🌿 A Natural Product, Crafted with Care

Each wheel of Apennine Pecorino is produced artisanally, without additives or preservatives.
The milk comes from pasture-raised sheep, fed on wild herbs and mountain flowers, giving the cheese a unique aromatic profile with notes of dried fruit, butter, and a subtle piquant finish typical of long ageing.

Meticulous attention at every stage—from milking to maturation—ensures a genuine, complex cheese with remarkable personality.


🧑‍🌾 Tradition and Ageing

The milk is curdled using natural rennet and processed according to methods passed down through generations. After shaping, the wheels are aged for 12 months in cool, well-ventilated environments, where they mature slowly, developing their golden rind and full, lingering flavour.
